BANQUET PREP COOK

Reports to: Executive Chef, position is non-exempt

THE ROLE

The Banquet Prep Cook works directly with the Banquet Chef and Executive Chef to execute culinary operations related to banquet functions and group events. You will be responsible for prepping and executing high-quality food service for events ranging from intimate gatherings to large-scale functions of up to 250 guests. This includes following production timelines, plating logistics, and ensuring food quality and presentation meet our standards at every touchpoint.


A deep understanding of high-volume cooking techniques-including batch cooking, holding, and rethermalization methods is critical. You must be able to adjust quickly to last-minute changes and maintain poise under pressure during peak service times. You are a task-oriented and list-driven individual who is comfortable working closely with the Banquet Chef and other culinary leadership.


Must be able to work evenings and weekends.


Pay range is $18 per hour, plus a portion of the banquet service charge for each banquet event.


WHAT YOU WILL DO



  • Work closely with the Banquet Chef, Executive Chef, Sous Chefs, and fellow cooks to help deliver the best possible food and guest experience.



  • Support your team by preparing high-quality ingredients, maintaining clean and organized work areas, and following food safety standards.



  • Assist with banquet and catering event preparation, including large-batch cooking, organizing mise en place, and ensuring items are ready on schedule.



  • Help with plating and service for events up to 250 guests, keeping food quality and presentation consistent from the first plate to the last. Pay special attention to plating aesthetics-whether it's detailed banquet plates or visually appealing displays such as charcuterie boards-ensuring presentations reflect the standards of the Jasper Hotel.



  • Step in to support the restaurant kitchen when banquets are not in session.



  • Take care of culinary equipment and kitchen spaces, keeping them clean, safe, and in good working order. Report any issues to the Chefs right away.



  • Communicate regularly with the Chefs and your teammates to stay aligned on prep lists, timelines, and priorities.
